Sun Basket Packaging Review
Sun Basket’s weekly meal delivery comes well insulated in a cardboard box that you can ship back to recycle. All meals are individually packaged in brown paper bags with all of the ingredients inside. This makes it very convenient when it’s time to cook since you don’t have to look through the fridge for the ingredients.
The meat is packaged separately at the bottom of the box under the ice packs. And the box stays cold if left on the porch all day.

Sun Basket’s Roasted Acorn Squash Recipe has been one of our all time favorites! We loved it so much we keep cooking it on special occasions. This recipe is very easy to cook, and the sweet savory flavors compliment each other perfectly. The serving size for 2 adults was the perfect amount, with a little extra quinoa.

The most time consuming part of the recipe is cutting up the fresh vegetables and fruit. If you have a food processor, you can use it to chop the onions and garlic.
You simply bake the squash, garlic, grapes, and onion then prepare the quinoa. Once the meal is done, you put it all together!
For this elegant winter feast, Chef Justine shares a nifty trick: she tucks fresh garlic cloves under acorn squash halves before roasting them. The squash takes on the flavors of the the garlic, while the garlic cloves roast without burning. Then she uses the garlic to season an easy dressing for the quinoa.
- 1 acorn squash
- 3 to 4 shallots
- 5 ounces red grapes
- Peeled fresh garlic
- ½ cup rainbow quinoa
- 1½ ounces roasted almonds
- Fresh flat-leaf parsley
- Fresh thyme
- 1 tablespoon sherry vinegar
- ¼ cup crumbled goat cheese
